Easy Banana Bread | A Simple Homestead Recipe

When bananas sit a little too long on the counter and no one reaches for them fresh, this is the recipe we turn to. It uses simple staples we always keep stocked and comes together quickly without anything fancy.

This easy banana bread from the pantry has become a quiet go-to in our home. It is warm, moist, and dependable. The kind of recipe you can make without running to the store.


Banana Bread Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup softened butter
  • 2 eggs
  • 1 ½ cups brown sugar
  • 2 tablespoons vanilla extract
  • 3 to 4 overly ripe bananas, mashed

All of these ingredients are simple pantry staples, which is why this banana bread fits so naturally into our from-scratch rhythm.


How to Make Easy Banana Bread

  1. Preheat your oven to 350°F
  2. In a bowl, combine flour, baking soda, and salt.
  3. In a separate bowl, cream together softened butter, eggs and brown sugar until smooth.
  4. Add vanilla and mashed bananas to the butter mixture and stir until combined.
  5. Slowly mix the dry ingredients into the wet ingredients until just incorporated. Do not overmix.
  6. Pour the batter into a greased loaf pan.
  7. Bake at 350°F for 35 minutes to 1 hour, depending on your oven.

The banana bread is done when a toothpick inserted in the center comes out clean.
